In Japan, the home of onigiri, it was customary to eat onigiri at lunch that had been made in the morning. That’s why a business model—like convenience stores—where onigiri made in factories are sold hours later became viable. Onigiri culture has spread to the West. However, since the Japanese style was exported as-is, the model involved making them in factories or restaurant kitchens, displaying them, and selling them—in other words, they were retail stores. Amid this, a new trend emerged from Japan: “Handmade, Freshly Made, Counter-Style Onigiri & Omusubi Restaurant.” This was a revelation. Eating freshly made onigiri right off the counter, just like sushi. The flavor is truly astonishing. We want you to experience it too. That restaurant is Mamma.
