(CEO: Akira Tsuchiya). Rather than a retail store that sells pre-made onigiri, this will be a restaurant-style outlet where staff prepare each rice ball on the spot using one of 20 different fillings upon order and serve them directly from the counter. The store will offer dine-in, takeout, and delivery options. Most of these shops, like Gonbei, operate on a model of preparing food in advance for retail sale. In contrast, the Japanese onigiri boom was driven by “Bongo” in Otsuka, Tokyo, which featured a style centered on handmade, freshly made onigiri served at the counter, with a selection of up to 50 different fillings.
