“Takesan,” a clay pot miso ramen restaurant, opened its second location in Paris's Marais district on July 14, just two years after its initial opening.
──Shinshu’s clay pot ramen, recognized by Paris: A journey to a city of history, culture, and youth. A new wave driven by Shinshu miso, with a 242-year history──Due to the extreme heat, we will be operating as a “Soft Open” until the grand opening event in late August.

“Takesan,” a clay pot miso ramen chain (Headquarters: Miso Noodle; Main Store: Obuse Town, Nagano Prefecture; CEO: Tetsuaki Takeda), which is supported in its overseas expansion by Assentia Holdings (CEO: Akira Tsuchiya), opened its second location in Paris’s Marais district on July 14, 2026.
Since the opening of its first location in April 2024, the restaurant has garnered strong support from both local Parisians and tourists, leading to the opening of its second location just two years later. Both the first and second locations are operated in partnership with local Parisian food and beverage companies.
Additionally, as Europe has been experiencing intermittent heat waves, the grand opening event has been rescheduled for late August to avoid the heat.
■ Results and Background of the First Store
On April 13, 2024, the first European location of “Takesan,” a clay pot miso ramen restaurant, opened in Paris. Its unique concept—“authentic miso ramen served in a clay pot”—stands out even in Paris, where ramen culture is well-established, and the restaurant has been nearly fully booked every day since its opening. Awareness has spread not only among local French residents but also through word of mouth from tourists across Europe and fans of Japanese cuisine, leading to strong growth that culminated in the opening of a second location just two years later.

■ Location of the Second Store: Le Marais, Paris
Le Marais is a historic district spanning the 3rd and 4th arrondissements of Paris. While it retains medieval mansions and cobblestone streets, it is also one of Paris’s premier cultural hubs where cutting-edge fashion, contemporary art, and diverse culinary offerings coexist. It is a neighborhood known for its young people and new cultural trends. As a trendy area attracting not only locals but also many tourists from around the world, it naturally draws people seeking “authentic culinary experiences.” This environment aligns perfectly with Take-san’s concept of “cuisine that lets you experience Japanese fermentation culture,” leading us to conclude that it is the ideal location for our second store.

■ About “Takesan” Clay Pot Miso Ramen
“Takesan” is a restaurant specializing in clay pot miso ramen, founded in 2008 in Nagano City, Nagano Prefecture, by owner Tetsuaki Takeda, who wanted to create a ramen dish that would become a local specialty of Nagano. Featuring Shinshu miso brewed in wooden barrels by “Kokuhei Miso Brewery”—a long-established miso brewery in Obuse Town, Nagano Prefecture—the ramen is served piping hot in a clay pot. A distinctive feature of this unique style is the option to enjoy “zousui” (rice porridge) made with the remaining broth after finishing the meal (available as an add-on). The restaurant also offers a vegan-friendly menu item, “Shinshu Miso Kura Ramen,” which uses absolutely no animal-derived food ingredients, catering to diverse dietary cultures and restrictions.
The brand’s international expansion is being carried out with the support of Assentia Holdings Co., Ltd., and it currently operates in three countries: Mongolia (Ulaanbaatar), France (Paris), and Poland (Warsaw). This second location in the Marais district marks the brand’s second store in France.

■ Features of the Second Location: Seafood-Based Miso Ramen Series
At the Mare location, in addition to the Shinshu miso-based lineup offered at the first location, we are introducing a new series called “Seafood Miso Ramen,” based on a seafood broth. This new style combines a rich seafood broth made from Hokkaido kelp, dried sardines, and bonito flakes with the fermented umami of Shinshu miso. As an exclusive menu item available only at the Mare location, it aims to differentiate the store from the first location. This new offering is tailored to the culinary preferences of Parisians who enjoy seafood and fermented foods, and it promotes “Japanese dashi culture, enjoyed in a clay pot” in a broader context.
*The Seafood-Based Series will be available starting with the grand opening event (late August).

This is thanks to the efforts of the Paris store owner, who has been passionately managing the Takesan brand locally.
I feel that their deep understanding of our distinctive ramen—based on miso shipped directly from Obuse Town in Nagano Prefecture—and their efforts to introduce it to Parisian customers have greatly contributed to our expansion there.
Furthermore, in preparation for opening this second location, the owner of the Paris store proposed a seafood concept featuring miso cooked in a clay pot, and we decided to launch this new concept in response.
We traveled to Paris to discuss the food ingredients, flavors, and presentation available in France, tailoring the concept specifically to the Paris store.
The concept is “Takesan Seafood.”
We plan to open the restaurant in July, followed by a grand opening event scheduled for late August.
While promoting Nagano’s ramen and miso, we aim to further strengthen our expansion overseas.
