Takesan Warsaw, a clay pot miso ramen restaurant, opens on June 23. This is its second location in Europe.

    Clay Pot Miso Ramen Takesan (Headquarters: Miso Noodle Co., Ltd., President Tetsuaki Takeda) is opening its second European location, “Clay Pot Miso Ramen Takesan Warsaw,” in Warsaw, the capital of Poland.

    The restaurant is located on the first floor of a building facing Marszałkowska Street, a major thoroughfare in central Warsaw.

    Reasons Why Our Local Partner Chose Takesan

    ① Although Warsaw, Poland, is a highly competitive ramen market, there is still no ramen there with a distinct miso flavor.

    ② Takesan’s first European location, in Paris, France, has been a huge success.

    ③ Furthermore, Warsaw, the capital of Poland, is located at 52 degrees north latitude—a high latitude equivalent to the northern part of Sakhalin, which is even further north than Hokkaido in Japan. It is an extremely cold region where summer temperatures range from 20 to 24 degrees, and average temperatures in November, December, and January drop below freezing, making it an ideal location for clay pot ramen.

    Founder Tetsuaki Takeda’s Vision for Opening a Location in Poland

    “It all began in 2019 when we set up a booth at the Vegan Festival in Berlin, Germany, and received a message from Ascencia informing us that our current partner had come to Berlin to check out the event. I was truly delighted that they maintained such a strong interest in Taku-san throughout the long period leading up to their visit to Obuse Town in Nagano Prefecture.

    After conducting a fact-finding trip to Poland at the end of November last year, I became convinced that the local food culture and climate would create an environment where Takesan’s ramen would be warmly received. I feel that our partner shares this same conviction.

    I believe it is important to adapt to the local tastes (such as saltiness and soup concentration) of the region where we open a store, in consultation with local franchisees, while staying true to our brand’s core values. We’ve made similar adjustments in Mongolia and Paris and have received positive feedback.

    About Takesan: Clay Pot Miso Ramen

    Take-san, a clay pot miso ramen restaurant, began in 2008 when owner Tetsuaki Takeda opened his first location in Higashiwada, Nagano City, Nagano Prefecture, with the goal of creating a ramen dish that would become a local specialty.

    From the very start of the first store, Takeda and a designer—a friend from his college days—took charge of everything from the store’s interior design to the logo and promotional materials. They have also designed all of the chain’s current overseas locations.

    In 2018, several months before opening the second Takesan location on the grounds of “Kokuhei Miso Brewery,” a long-established miso brewery in Obuse Town, Nagano Prefecture, the company received a proposal from Assentia Holdings to expand overseas. This led to the establishment of a new company, Miso Noodle Co., Ltd., dedicated to overseas expansion.

    At Kokuhei Miso Brewery, we have them produce miso for our miso ramen using traditional methods involving wooden barrels. The ramen menu features “Shinshu Miso Kura Ramen,” a plant-based (vegan) dish that uses absolutely no animal-derived food ingredients—such as pork bones or eggs—and excludes chemical seasonings, as well as vegan gyoza.

    Takesan’s Overseas Expansion Track Record

    In August 2019, the company opened its first overseas store in Ulaanbaatar, the capital of Mongolia, followed by its second overseas store—also in Ulaanbaatar—in August 2021, during the COVID-19 pandemic.

    In April 2024, a store opened in Paris, the capital of France.

    Then, a store is scheduled to open in Warsaw, the capital of Poland, in June 2026.

    Additionally, the same partner as the first Paris store is scheduled to open a second store in late June or early July 2026.
