## SUSHI YOUR WAY～A business model enabling multiple outlets to serve Japanese cuisine your way in food courts

## **Characteristics from the customer’s point of view**

- Offering sushi, ramen, takoyaki, and chicken katsu—dishes typically associated with Japanese cuisine—at affordable prices like McDonald's.
- Customizable to your taste. For example, with ramen, you can choose the soup type (soy sauce, miso, tantanmen, chicken white soup), the soup's richness, spiciness, and toppings.
- Enjoy Japanese food casually and fill up at an affordable price. USD5–8
- You can watch the cooking process right in front of you.

## **Characteristics of the business**

- No chef required. Entire process is manualized.
- Sushi, ramen, and chicken cutlet appeal to a wide range of customers. Cooking time is under 4 minutes.
- Zero customer complaints about taste.
- Casual store design as a fast-food restaurant, distinct from other Japanese restaurants. Marugame Style layout where customers place custom orders and wait at the counter for their meal to be completed.
- No special kitchen equipment needed. Minimal investment. No gas required. Electric only.
- A small central kitchen enables domestic chain expansion. Suited for master franchising.
