焼肉屋であれば 肉
すし屋であれば 魚
確かにそうだ。そのとおり。
経営者が、役員が、そして社員がこのように考える企業は遠からず潰れる。
自分の会社の本当の商品はなにか?
本質を突き詰めて考えることが大事で、
浅いレベルで考えると先述のような答えになる。
そしてその先にあるものはコモディティ化
(差別化ができず商品の量や価格のみに走ること)
に陥り、値引き合戦、老い先短し。
顧客の側から見た会社の本当の商品は何か?
なにを期待してきているのか?
何に喜ぶのか?
琴線(金銭でなく)に触れるかということだ。
飲食の第一次品質は間違いなく味だ。
だが、それは相対的な「味」だ。
商品そのものの絶対的な「味」ではなく、
店舗の雰囲気や従業員が醸し出す気(空気)が混じり合って
創り出す「味」。これが第一次品質だ。
従業員は料理だけでなく雰囲気や空気を加工して
調理しなければならない。
調理とは単に食物の料理だけでない。
雰囲気をどう加工するのか?これも調理だ。
サービス従事者は「気」を調理しよう!!
店舗に入ればすぐわかる。
気のある店舗は気持ちがよい。
気のない店舗は価格だけが気になる。
そう、安いか高いかだけの世界。
自分の会社の本当の商品はなにか?を従業員で考える時間も大切だ。
それが会社の、そして店舗のポリシーになる。
