After years of perfecting his recipes, Takeda introduced the Clay-pot Miso Ramen, blending the rich taste of Shinshu Miso with a unique cooking technique designed to keep you warm during the cold Nagano winters.
The turning point came when Takeda met KOKUHEI-MISO. Impressed by his dedication, KOKUHEI-MISO crafted a special miso exclusively for TAKE-SAN. This collaboration led to the opening of TAKE-SAN’s second location in Obuse-machi, blending 240 years of miso tradition with modern ramen artistry.
In 2018, Shinshu Miso Ramen was born—free from animal products and MSG. A true reflection of 240 years of history, TAKE-SAN is now ready to share its incredible flavors with the world.

In 2019, TAKE-SAN took its passion to Berlin’s Vegan Summer Festival, becoming the first Japanese ramen shop to participate in the event. Serving over 200 bowls of ramen daily, TAKE-SAN won over many new fans and proved that the world is ready for authentic Shinshu Miso Ramen.
